About Brasserie Gavroche
Welcome to Brasserie Gavroche, the creation of highly respected Chef Frédéric Colin. Born and brought up in Paris, Frédéric spent his formative years in his grand père Henri’s restaurant and kitchen. With countless, fresh and wonderful ingredients from all over France sent to the capital’s best restaurants, Frédéric naturally fell in love with food and the culinary arts.
Having since lived in many continents, helming fine restaurants as well as internationally renowned luxurious hotel chains, he has decided to settle in Singapore.
“I wanted to go back to my roots, cooking is in my blood. Now that I am permanently based here, I would like to share with Singaporeans and expatriates the hearty classic dishes that Parisians enjoy daily,” said the Chef Patron.
Chancing upon the charming conservation shophouse on Tras Street, the concept of Brasserie Gavroche came into fruition. The cuisine on showcase is timeless - classic dishes prepared from the heart and superbly executed with a deft hand and palatte, honed over decades of cooking.
True to the ethos of the Parisian spirit, and in celebration of his roots, Chef Frédéric’s menu comprises many old recipes from his grand père and comfort food from his youth.
Be delighted with the Pate en croute et foie gras – his grandfather’s baked pork terrine pie with duck liver, a wonderful cold appetizer that has not been seen on menus for over a decade. Indulge in the Tartine d’os a moelle – bone marrow that sits delicately atop scrumptious parsley puree and garlic confit on toasted Poilane bread. For a lighter appetiser, the Couteaux poêlés au jambon cru Ibérique – sautéed bamboo clams with Iberico ham is a weightless melody of texture and taste.
